Organic New Zealand Bush honey mostly contains New Zealand Honeydew, as well as other New Zealand native floral sources such as Kowhai, Cabbage Tree, Matagouri, and Broadleaf.
Honeydew is is sourced from the sap of Beech trees in winter and spring, when there is no or little other floral sources for the bees to forage, resulting in a very pure honey with special properties and flavour.
