OK so let’s start off by saying this is one of the easiest recipes you will ever come across. Honestly….it takes about 5 minutes to knock this up and there is only a bit of melting and mixing involved…!!!
When you’re craving something sweet but are reluctant to reach for cake or the packet of biscuits lurking in the pantry, try making these easy chocolate treats. They are rich (so you only need a small piece), super yummy and ridiculously easy to make.
The beauty is, you can use whatever is in your pantry that takes your fancy; something for a bit of crunch and something a bit chewy is a good combination. I’ve used dried peaches for the ‘chew’ but raisins, dried cranberries, dried apricots or fresh blueberries would work just as well.
For the crunch, I used puffed quinoa and pumpkin seeds, but rice crispies, broken up digestives or roughly chopped nuts would be brilliant.
These rich, easy chocolate treats go perfectly with a cup of tea in the morning. Or in the afternoon. Errrr or in the evening….!!!!
Ingredients
1/2 Cup Cocoa Powder
1/4 Cup Maple syrup (or golden syrup)
1/4 Cup Coconut Oil, melted
1 Tsp Vanilla Extract
1/4 Cup Peanut Butter (or any nut butter you prefer)
1/2 Cup Dried Peaches, roughly chopped
3 Tbsp Puffed Quinoa
1/4 Cup Pumpkin Seeds
Method
1. Add everything to a bowl and mix until thoroughly combined.
2. Pour the mixture into a lined loaf tin or dish that’s safe to put in the freezer.
3. Freeze for 1 hour or until set.
4. Remove from the freezer and cut into (small) slices.
5. Enjoy and store any that’s left in the fridge!!
