Ice cream that’s good for you?

This is an oldie but a goodie and a brilliant way to use up those overripe bananas that have languished in the fruit bowl for too long. It’s really stretching the imagination to call it a ‘recipe’ but if your kids like ice cream and you haven’t tried this yet – I encourage you to give it a go!! It’s super easy, quick, and best of all, the result is a really yummy soft serve ice cream that is ALL goodness. Dairy free, gluten free, sugar free and no nasty gums, stabilisers, fake flavours or rubbish that are found in lots of bought ice cream.

I’m a fan of real ice cream myself – egg yolks, cream, sugar and vanilla but let’s face it…sometimes the convenience and speed of store bought ice cream wins out over the effort and time of making my own. I know..dreadful. But here we have a great compromise. It’s healthy, easy, cheap and whilst it’s not the real thing, it really is good!!!

All you need are some frozen bananas and a food processor or blender. A  beefy motor on your machine is preferable though, as the frozen bananas give it a bit of a work out…

Here we go then

Step 1: Put your frozen bananas into the processor or blender. I have found that even though one child could easily eat one whole banana, a whole banana per child for this recipe is a bit too much – so aim for around 2/3 banana per child.

Bowl of ice creamStep 2: BLEND!! Top Tip: Hold onto the machine when you first set it off. It clatters around and if left unattended….might clatter itself onto the floor…!! A good way to overcome this is to use smaller pieces of banana and defrost them slightly before using so they aren’t so hard. Keep blending and scraping down the sides of the bowl until you have a smooth, scoopable consistency.

Step 3: If you want to mix it up a bit, add some berries (fresh or frozen) or any kind of fruit and blend again. If you’re feeling naughty, some Nutella works a treat but your sugar free goes out the window…

Step 4: Serve and enjoy.

And if, in the unlikely event there are any leftovers you can spoon the ice cream into Kai’cicles by Kai Carrier or these cool Ice Pops from Munch. Put them back in the freezer and voila. Ready-made ice creams to help them (or you) cool off on hot days!!
